Our client is searching for an experienced Sous Chef to step into the role of Executive Sous Chef. They are searching for a calm and collected individual who has experience running a large kitchen operation.
As Exec. Sous Chef Responsibilities Include:
- Ensure the smooth running of a kitchen with 25+ Chefs.
- Act as the most senior Chef in the absence of the Exec Head Chef.
- Ensure all new Chefs are trained to the expected standard.
- Ensure that all HACCP standards are monitored, adhered to and recorded.
- Development of new menus and costings of same.
- Ensuring purchasing is in-line with budgets.
- Attending meetings and departmental briefings.
- Running a multi-outlet kitchen, including a large banqueting kitchen.
- Any other responsibilities as assigned.
